Photo: Damon Green, Flickr Intrepid diners who were nervously approaching the final suggestions on Alabama's official "100 Dishes to Eat Before Your Die" list now have 67 new reasons to keep on eating. The state's department of tourism this month issued a third edition of its phenomenally popular brochure , which now features 215 signature plates. While a few dishes have dropped off the list since its first printing in 2005, the department has understandably refused to let go of favorites like Dreamland 's ribs and white bread, Ezell's catfish and Irondale Café 's fried green tomatoes. "We'd like everyone to try all 215 dishes," department spokeswoman Edith Parten says. This year's new additions span the state, from Huntsville - where the Cotton Row Restaurant serves up peanut butter and jelly in phylo - to Mobile, home of NoJa's ginger donut . As the brochure's adjoining cover photos of high-end chef Frank Stitt and cheeseburger maven Lucy Buffett suggest, the showcased dishes run the gamut from homespun to hoity-toity: The 2010 list includes smoked meat and homemade stew, slaw dogs, green beans, strawberry salad, prime rib and day boat scallops with wild mushroom risotto. And the former owes its prominence to the latter -- plentiful crabs that once bred like hard-shelled rabbits in the bay's warm waters. "When they were prevalent, bars here would have steamed crabs as giveaways," explains local food writer Dara Bunjon. "So that people would drink more, they made them that much more spicy." In other words, it seems that the city's core condiment, known as Old Bay Spice, was cooked up as a ruse to raise profits at drinking dens. Food guru Marguerite Thomas theorizes that the city's history as a port combines with its Southern-tinged psyche to make spice such a staple. "You can go to a crab house and order cracked crabs without Old Bay, but people look at you funny," she chuckles. "Baltimoreans take great pride in it." The difference between restaurants' recipes for crab cakes is usually centered on the seasoning. She also loves the crab cake-esque coddie: "I grew up eating them. I'd go to the fountain and for 11 cents, I got a coddie and a Coke as my after-school snack." Thomas says that coddies were traditionally a Jewish treat, a kosher riff on the crab cake made from cod and potato and served on a saltine with a dab of mustard. Another reason not to move, another vodka stinger!" The stinger is an after-dinner drink typically made with brandy, though various other liquors can be substituted. The earliest recipe we have in our cocktail book collection goes back to Tom Bullock's The Ideal Bartender published in 1917. Mr. Bullock calls for a jigger of brandy and a pony of white crème de menthe, but we prefer a little less crème de menthe and a bit more brandy. No matter the proportions, the stinger has been seen sipped in the swankiest New York nightspots and remains a classic the world over. We recently discovered another stinger of a drink called the Golden Sting Ray in an old Galliano recipe book called Discover Gold. On Valentine's Day, Demián and I discovered a secluded beach full of beautiful sea shells. Unfortunately, our adventures included my stepping on a sting ray.
