I’m hoping this will help me reach my goal of losing weight. I’m starting to go on the treadmill also. My big problem has been eating front of the computer as I used to eat in front of the TV. The commission is challenging soul singers, rockers, bluesmen and their partners to lose a collective 2,010 pounds in 2010 through a free health program that includes cooking classes, yoga sessions and nutrition coaching. "We want our musicians to look as good as they sound," commission director Johnnie Walker explains. According to Walker, musicians' waistlines are often stretched by a steady diet of pub grub and alcohol. "We're providing them with a variety of options so they don't have to eat hot fries and greasy potato skins," says Walker, who's planning to take the program's 55 participants on a tour of a Whole Foods grocery store this week. Walker hopes the field trip will inspire gig-going musicians to pack lunch boxes with carrots and celery sticks instead of ordering their meals from nightclub menus. (The next one is in 2011). James Kent, the sous chef at award-winning Eleven Madison Park restaurant in New York City, has been selected to represent the U.S. and bring back the gold. His wingman will be Tom Allan, another sous chef at Eleven Madison. Slashfood spent a few minutes talking with Kent about his recent nomination to the team. How do you formulate a strategy? JK: For the finals competition, Chef Humm of Eleven Madison Park was a great mentor in helping to steer us in the right direction. We focused on both taste and presentation and refined a bunch of dishes until we came up with a salmon and lamb platter that we felt great about. We are going to do the same thing for the international competition, but this time, with the support of the Bocuse d'Or USA Foundation, its Culinary Council and of course, Eleven Madison Park behind us.
